Instructions
Preheat oven to 375°F (190°C). Slice a pocket into each chicken breast.
Mix spinach, cranberries, cream cheese, mozzarella, garlic, and red pepper flakes.
Stuff mixture into chicken pockets; secure with toothpicks if needed.
Rub chicken with salt, pepper, and olive oil; sear in skillet 2–3 mins per side.
Bake in oven for 20–25 mins until cooked through. Remove toothpicks, brush with butter, garnish, and serve.
Notes
Secure chicken with toothpicks to prevent filling from spilling during baking.
