A delicious and flavorful chicken dish filled with spinach, cranberries, and cheese, perfect for a special dinner.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 cups fresh spinach, chopped
  • ½ cup dried cranberries
  • ½ cup cream cheese, softened
  • ½ cup shredded mozzarella (or Swiss for a nuttier flavor)
  • 1 clove garlic, minced
  • ¼ teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon olive oil or melted butter (for brushing)

Garnish

  • Fresh rosemary or parsley, for garnish

Instructions 

  • Preheat oven to 375°F (190°C). Slice a pocket into each chicken breast.
  • Mix spinach, cranberries, cream cheese, mozzarella, garlic, and red pepper flakes.
  • Stuff mixture into chicken pockets; secure with toothpicks if needed.
  • Rub chicken with salt, pepper, and olive oil; sear in skillet 2–3 mins per side.
  • Bake in oven for 20–25 mins until cooked through. Remove toothpicks, brush with butter, garnish, and serve.

Notes

Secure chicken with toothpicks to prevent filling from spilling during baking.
