A creamy, cheesy spinach and artichoke dip perfect for sharing at parties or as a delicious appetizer.

1Tbspolive oil (extra virgin)
2Tbspshallots (finely chopped)
1Tbspfresh garlic (minced)

1cupmarinated artichokes (rinsed, drained, and finely chopped)
4cupschopped fresh spinach (chop before measuring)
3Tbspwhole milk
4ozcream cheese
1/4cupsour cream (full fat)
1/4cupgood mayonnaise
4Tbspgrated romano cheese
1/4tspfreshly cracked black pepper
1/2tspyour favorite hot sauce (optional)

Instructions
Warm a saucepan over medium heat, add olive oil, then cook shallots for 1-2 minutes. Add garlic and cook until fragrant.
Add chopped artichokes and cook for 3 minutes. Stir in spinach and cook until wilted, about 3-4 minutes.
Stir in milk, then add cream cheese, sour cream, and mayonnaise, mixing well after each addition. Add romano cheese, pepper, hot sauce, and salt to taste, then turn off heat.
Preheat oven to low broil. Cut a hole in a small bread loaf, place the dip inside, and broil for about 5 minutes until bubbly and slightly browned.
Remove from oven, transfer to a platter, and serve with bread squares, pita, chips, or flatbread.
