A creamy, cheesy spinach and artichoke dip perfect for sharing at parties or as a delicious appetizer.

Ingredients

olive oil and aromatics

  • 1 Tbsp olive oil (extra virgin)
  • 2 Tbsp shallots (finely chopped)
  • 1 Tbsp fresh garlic (minced)

main ingredients

  • 1 cup marinated artichokes (rinsed, drained, and finely chopped)
  • 4 cups chopped fresh spinach (chop before measuring)
  • 3 Tbsp whole milk
  • 4 oz cream cheese
  • 1/4 cup sour cream (full fat)
  • 1/4 cup good mayonnaise
  • 4 Tbsp grated romano cheese
  • 1/4 tsp freshly cracked black pepper
  • 1/2 tsp your favorite hot sauce (optional)
  • to taste optional salt

Instructions 

  • Warm a saucepan over medium heat, add olive oil, then cook shallots for 1-2 minutes. Add garlic and cook until fragrant.
  • Add chopped artichokes and cook for 3 minutes. Stir in spinach and cook until wilted, about 3-4 minutes.
  • Stir in milk, then add cream cheese, sour cream, and mayonnaise, mixing well after each addition. Add romano cheese, pepper, hot sauce, and salt to taste, then turn off heat.
  • Preheat oven to low broil. Cut a hole in a small bread loaf, place the dip inside, and broil for about 5 minutes until bubbly and slightly browned.
  • Remove from oven, transfer to a platter, and serve with bread squares, pita, chips, or flatbread.
