A flavorful and easy-to-make bowl combining spicy tuna, rice, and fresh vegetables for a satisfying meal.

Ingredients

Spicy Mayo

  • 0.25 cup mayonnaise
  • 1 tablespoon sriracha
  • 1 teaspoon sesame oil

Pickled Carrots

  • 1 medium carrot, julienned
  • 0.25 cup rice vinegar
  • 0.25 cup sugar
  • 0.25 teaspoon salt

Bowls

  • 5 ounces canned tuna, drained
  • 2 cups cooked white rice
  • 0.5 cup cucumber, sliced

Garnish & Optional

  • to taste sesame seeds (for garnish)
  • to taste eel sauce (for drizzling (optional))
  • to taste sliced avocado or edamame (optional)

Instructions 

  • Mix mayonnaise, sriracha, and sesame oil until smooth.
  • Toss julienned carrots with rice vinegar, sugar, and salt; let sit 10 minutes.
  • Combine tuna with most of the spicy mayo; set aside some for topping.
  • Divide rice into bowls; top with cucumber, pickled carrots, and tuna.
  • Drizzle with remaining spicy mayo, eel sauce, and garnish as desired.

Notes

Feel free to add sliced avocado or edamame for extra flavor and nutrition.
