Instructions
Mix mayonnaise, sriracha, and sesame oil until smooth.
Toss julienned carrots with rice vinegar, sugar, and salt; let sit 10 minutes.
Combine tuna with most of the spicy mayo; set aside some for topping.
Divide rice into bowls; top with cucumber, pickled carrots, and tuna.
Drizzle with remaining spicy mayo, eel sauce, and garnish as desired.
