Ingredients

Noodles

  • 8 ounces dried noodles (like spaghetti or linguine)
  • 0.5 cup creamy peanut butter
  • 0.25 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon sriracha (or more, to taste)
  • 1 clove garlic, minced
  • 0.25 cup hot water
  • 1 cup shredded carrots
  • 1 cup shredded red cabbage
  • 0.5 cup chopped green onions
  • 0.25 cup chopped cilantro
  • 0.25 cup chopped peanuts (for garnish)

Instructions 

  • Cook noodles according to package directions. Drain and rinse with cold water.
  • Whisk together peanut butter, soy sauce, rice vinegar, honey, sriracha, and garlic until smooth. Gradually add hot water to reach desired consistency.
  • Combine cooked noodles, carrots, cabbage, green onions, and cilantro in a large bowl. Toss with peanut sauce.
  • Garnish with chopped peanuts before serving.

Notes

Adjust sriracha for desired spice level.
