6ounceswide rice noodles (Pad Thai style)
0.33cupsoy sauce or tamari
0.25cupThai chili sauce
2tablespoonsfish sauce
2tablespoonsrice vinegar
1tablespoonlemongrass paste (optional)
to tasteBlack pepper and red chili flakes
For the Stir-Fry
3tablespoonssesame oil (or olive oil)
1poundflank steak, thinly sliced
2bell peppersbell peppers, thinly sliced
2tablespoonsbutter, divided
1shallotshallot, thinly sliced
4–6clovesgarlic, chopped (divided)
1tablespoonpickled ginger, chopped
For Garnish
½cupfresh cilantro or Thai basil, chopped
4green onionsgreen onions, chopped
¼cupsesame seeds
⅓cuproasted peanuts, chopped

Instructions
Soak rice noodles as per package instructions, then drain.
Whisk together soy sauce, chili sauce, fish sauce, rice vinegar, lemongrass paste, pepper, and chili flakes to make the sauce.
Heat sesame oil, cook beef and peppers until crisp, then add butter, shallot, garlic, ginger, and chili flakes; cook until fragrant.
Add noodles and sauce, toss to combine, cook 1 minute, then remove from heat. Stir in herbs and green onions.
Toast sesame seeds with garlic and butter until golden, then garnish noodles with green onions, peanuts, sesame seeds, and lime wedges.
