Ingredients

Chicken

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 cup cornstarch
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup neutral oil, for frying (like canola or avocado)
  • 1/2 cup honey
  • 1/3 cup hot sauce (like Frank's RedHot)
  • 2 tbsp unsalted butter (or dairy-free butter)
  • 1 tbsp apple cider vinegar

Instructions 

  • Coat chicken cubes with cornstarch and spices.
  • Fry chicken in hot oil until golden and crispy, then drain on a wire rack.
  • Melt butter in skillet, add honey, hot sauce, and vinegar; simmer until glossy.
  • Toss fried chicken in sauce until coated.
  • Serve chicken over salad greens with sliced cucumbers, onions, and cherry tomatoes.

Notes

For extra crunch, double fry the chicken.
