A vibrant and flavorful rice bowl featuring spicy shrimp, creamy avocado, and fresh vegetables, perfect for a quick and satisfying meal.

Ingredients

Spice Mix

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp paprika
  • 0.5 tsp cumin
  • 0.25 tsp cayenne pepper (optional) (for extra heat)
  • to taste Salt and pepper

Main ingredients

  • 1 cup cooked white rice (or brown rice)
  • 1 avocado avocado, sliced
  • 0.5 cup cherry tomatoes, halved
  • 0.25 cup red onion, thinly sliced
  • 0.25 cup cilantro, chopped
  • 2 tbsp lime juice
  • 2 tbsp sour cream or Greek yogurt (optional) (for creaminess)
  • to taste Hot sauce (optional) (for extra spice)

Instructions 

  • Mix chili powder, paprika, cumin, cayenne (if using), salt, and pepper. Toss shrimp in olive oil and coat with spice mixture.
  • Cook shrimp in a hot skillet for 2-3 minutes per side until pink and opaque. Remove from heat.
  • Divide rice into bowls, top with cooked shrimp, avocado slices, cherry tomatoes, red onion, and cilantro.
  • Squeeze lime juice over bowls. Add sour cream and hot sauce if desired. Serve warm.

Notes

For extra flavor, marinate the shrimp with spices for 10 minutes before cooking.
