A vibrant and flavorful bowl combining tender salmon, fresh vegetables, and zesty dressing for a satisfying meal.

Ingredients

Protein

  • 1 piece 8 oz. salmon fillet

Vegetables

  • 0.5 whole avocado (sliced)
  • 0.25 cup corn
  • 0.25 cup diced tomatoes (fresh)
  • 0.25 cup black beans
  • 4-6 pieces blue corn tortilla chips
  • 1 cup lettuce (chopped)
  • 1 cup multi colored bell pepper
  • 0.5 cup red onion (sliced)
  • 1 tbsp olive oil
  • 2 tsp olive oil
  • 1 tbsp taco seasoning
  • 0.25 tsp salt
  • 1 tbsp lemon juice

Dressing

  • 3-4 tbsp taco flavored ranch dressing (or your favorite)

Instructions 

  • Season the salmon with salt, taco seasoning, and lemon juice. Pan sear until cooked, then cover with foil.
  • Sauté bell peppers and onion in olive oil until tender. Let cool slightly.
  • Layer lettuce in a bowl, then arrange other ingredients around it. Drizzle with dressing and serve.
