Ingredients

Chicken

  • 1 lb Boneless, skinless chicken thighs
  • 2 tablespoons Olive oil
  • 4 cloves Garlic, minced
  • 1 teaspoon Red pepper flakes (Adjust to taste)
  • 1 tablespoon Soy sauce
  • to taste Salt
  • to taste Pepper

Rice

  • 1 cup Jasmine rice
  • 2 cups Water

Sauce

  • 1 tablespoon Coconut oil (Or any cooking oil)
  • ½ cup Mayonnaise
  • 2 tablespoons Chili paste (Adjust to taste)
  • 1 tablespoon Lime juice
  • 1 teaspoon Honey (Optional)
  • to taste Fresh cilantro, chopped
  • to taste Sliced green onions
  • to taste Lime wedges

Instructions 

  • Cook rice with water until tender, then set aside.
  • Season chicken with garlic, red pepper flakes, soy sauce, salt, and pepper. Cook until browned and cooked through.
  • Prepare creamy chili sauce by mixing mayonnaise, chili paste, lime juice, and honey.
  • Assemble bowls with rice, sliced chicken, and top with cilantro, green onions, and lime wedges. Drizzle with chili sauce.
