Ingredients

Vegetables

  • 2 medium eggplants, cut into bite-sized cubes
  • 1 tablespoon vegetable oil
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1-2 red chilies sliced (adjust based on spice preference)
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1/2 cup water
  • 1 tablespoon cornstarch (optional, for thickening)

Sesame seeds (optional garnish)

Fresh cilantro (optional garnish)

Instructions 

  • Heat oil in a skillet, cook eggplant until golden and tender, then set aside.
  • Sauté garlic, ginger, and chilies for 1 minute until fragrant.
  • Add bell peppers and cook for 2-3 minutes.
  • Mix soy sauce, rice vinegar, sesame oil, sugar, water, and cornstarch if desired. Pour over vegetables and simmer 3-5 minutes.
  • Serve hot, garnished with sesame seeds and cilantro if desired.

Notes

Adjust spice level by varying the amount of red chilies.
