Ingredients

Vegetables

  • 2 pieces english cucumbers, thinly sliced
  • 1 cup shelled edamame, cooked and cooled
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup green onions, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon chili crisp (such as lao gan ma)
  • 1 teaspoon sesame oil
  • 1 teaspoon sesame seeds (optional)

Instructions 

  • Sprinkle cucumbers with salt, let sit for 10 minutes, then rinse and pat dry.
  • Combine cucumbers, edamame, cilantro, green onions, and garlic in a bowl.
  • Whisk soy sauce, vinegar, chili crisp, and sesame oil in a separate bowl.
  • Pour dressing over salad and toss gently to combine.
  • Sprinkle sesame seeds on top if desired.
  • Refrigerate for at least 30 minutes before serving.

Notes

For extra flavor, let the salad sit longer in the fridge before serving.
