Ingredients

Noodles

  • 6 oz rice noodles
  • 0.75 lb lean ground beef
  • 1 large red bell pepper (thinly sliced)
  • 1 medium onion (thinly sliced)
  • 0.5 tsp kosher salt
  • 3 large garlic cloves (thinly sliced)
  • 0.25 cup soy sauce (plus 1 tbsp)
  • 2 tbsp hoisin sauce
  • 0.25 tsp black pepper
  • 3 tbsp brown sugar
  • 2 tbsp lime juice
  • 2-4 tsp sambal oelek
  • 1 tsp cornstarch
  • 0.25 cup roughly chopped basil (plus more for garnish)
  • 0.5 cup starchy water

Instructions 

  • Soak rice noodles in very hot water for 1-2 minutes, then drain.
  • Cook beef in a skillet until browned, then add vegetables and salt; cook until softened. Add garlic and cook 1 minute.
  • Mix soy sauce, hoisin, pepper, sugar, lime juice, sambal oelek, and cornstarch; whisk with starchy water.
  • Add sauce to beef and vegetables; simmer until thickened. Toss in noodles and basil, adding starchy water as needed.

Notes

Adjust sambal oelek and soy sauce to taste for more heat or saltiness.
