Ingredients

Vegetables

  • 4 cups Carrots, peeled and sliced (Opt for fresh, vibrant carrots)
  • 1 tablespoon Olive oil (Can be substituted with avocado oil)
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Cumin (Can substitute with paprika or turmeric)

Salad ingredients

  • 1 cup Lentils (Green or brown varieties are best)
  • 1 cup Red onion, diced
  • 1 cup Bell pepper, diced
  • 2 tablespoons Lemon juice
  • 1 tablespoon Honey or maple syrup (Agave nectar can be used as a low-calorie alternative)

Dips

  • 1 cup Hummus (Can be substituted with dairy-free options if needed)

Instructions 

  • Preheat oven to 400°F (200°C). Toss carrots with olive oil, salt, pepper, and cumin. Roast for 25-30 minutes until tender.
  • Cook lentils in boiling water until tender, about 20 minutes. Drain and let cool.
  • In a bowl, combine cooked lentils, diced red onion, bell pepper, lemon juice, and honey. Mix well.
  • Serve roasted carrots alongside the lentil salad with hummus on the side.

Notes

For added flavor, sprinkle fresh herbs like parsley or cilantro before serving.
