Filling
2tablespoonsbutter(28 grams)
2 ½cupsbaking apples, peeled and finely chopped(315 grams)
2 ½cupsbaking pears, peeled and finely chopped(315 grams)
½cupgranulated sugar(100 grams)
1 ½teaspoonsground cinnamon
½teaspoonground ginger
½teaspoonnutmeg
¼teaspoonsalt
1 ½tablespoonscornstarch
½cupwater
juice of ½ lemonlemon juice
Egg wash
1largeegg(beaten with 1 tablespoon water)
1tablespoonwater
¼cupturbinado sugar
Instructions
Pulse flour, sugar, and salt in a food processor. Add butter and pulse until crumbly. Mix in vinegar and water, then chill dough for 1 hour.
Melt butter, cook fruit with spices and sugar until softened. Thicken with cornstarch mixture and lemon juice. Cool completely.
Preheat oven to 400°F. Roll out dough, cut circles, fill with fruit, seal, and crimp edges. Brush with egg wash, sprinkle sugar, and bake for 25-30 minutes.
