A flavorful and healthy salmon bowl featuring a savory soy ginger marinade, fresh vegetables, and rice for a satisfying meal.

Ingredients

Protein

  • 4 fillets salmon fillets, 5.3 oz each, skinless or skin-on

Sauces & Condiments

  • 4 tablespoons low sodium soy sauce
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha or chili paste, optional

Fresh Ingredients

  • 2 tablespoons fresh ginger, grated
  • 2 garlic cloves garlic, minced
  • 1 tablespoon sesame oil

Vegetables & Grains

  • 2 cups jasmine or sushi rice
  • 2.5 cups water
  • Pinch salt
  • 1 cup shelled edamame, frozen or fresh
  • 1 cup shredded carrots
  • 1 red bell pepper thinly sliced
  • 1 cup baby bok choy or snap peas, sliced
  • 2 green onions thinly sliced
  • 1 avocado sliced

Garnishes & Extras

  • 1 tablespoon sesame seeds (plus extra for garnish)
  • Fresh cilantro or microgreens, optional for garnish
  • Lime wedges for serving

Instructions 

  • Whisk soy sauce, honey, ginger, garlic, rice vinegar, sesame oil, and sriracha; set aside 2 tbsp marinade.
  • Marinate salmon in remaining sauce for 15-30 minutes.
  • Cook rice with water and salt until tender, then fluff.
  • Stir-fry edamame, carrots, bell pepper, and bok choy in sesame oil for 3-4 minutes.
  • Remove salmon from marinade, sear in skillet 3-4 minutes per side, then sprinkle with sesame seeds.
  • Assemble bowls with rice, vegetables, salmon, avocado, green onions, and drizzle with reserved marinade. Serve with lime wedges.

Notes

For extra flavor, garnish with fresh cilantro or microgreens and additional sesame seeds.
