A flavorful and easy-to-make tuna salad with a southwestern twist, perfect for a quick lunch or light dinner.

Ingredients

Dressing

  • 0.5 cup mayo or Greek yogurt
  • 1 lime lime (squeezed) (about 2 tablespoons juice)
  • 1 tablespoon taco seasoning

Main ingredients

  • 3 5-ounce cans tuna, drained and rinsed
  • 1 15-ounce can black beans, drained and rinsed
  • 1.5 cups corn (canned, fresh or frozen)
  • 1 medium tomato (diced)
  • 1 medium red onion (diced fine)
  • 0.25 cup minced cilantro leaves

Seasoning

  • to taste Salt and Pepper

For serving

  • as needed Lettuce (for serving)

Instructions 

  • Whisk together mayo, lime juice, and taco seasoning in a small jar or bowl.
  • Combine tuna, beans, corn, tomato, onion, cilantro, salt, and pepper in a large bowl. Add dressing and mix.
  • Serve over lettuce, in a sandwich, or in a wrap.
