Ingredients

Grains

  • 1 cup quinoa, rinsed
  • 2 cups water

Vegetables

  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 red red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 0.25 cup red onion, finely chopped
  • 1 avocado diced
  • 0.25 cup cilantro, chopped

Dressing

  • 0.25 cup olive oil
  • 3 tablespoons lime juice (about 2 limes)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

Instructions 

  • Cook quinoa in water until tender, then let it cool.
  • Combine cooled quinoa with vegetables and cilantro in a large bowl.
  • Whisk together olive oil, lime juice, cumin, chili powder, salt, and pepper for dressing.
  • Pour dressing over salad and toss gently to combine.
  • Serve immediately or refrigerate to meld flavors.

Notes

For extra flavor, add a squeeze of fresh lime before serving.
