A flavorful and easy-to-make Southwest Chicken Wrap perfect for lunch or dinner, packed with fresh ingredients and bold spices.

Ingredients

Protein

  • 1 lb boneless, skinless chicken breasts (cut into strips)
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder

  • 4 large flour tortillas (10-inch)
  • 1 cup romaine lettuce (shredded)
  • 1/2 cup corn kernels (fresh or canned, drained)
  • 1/2 cup black beans (rinsed and drained)
  • 1/2 cup cherry tomatoes (halved)
  • 1/4 cup red onion (thinly sliced)
  • 1/2 avocado sliced avocado
  • 1/4 cup fresh cilantro (chopped)
  • 1/4 cup Greek yogurt (for Southwest sauce)
  • 2 tbsp mayonnaise (for Southwest sauce)
  • 1 tbsp fresh lime juice (for Southwest sauce)
  • 1 tsp honey (for Southwest sauce)
  • 1/2 tsp chipotle powder (adjust to taste for Southwest sauce)

Instructions 

  • Mix chili powder, cumin, garlic powder, onion powder, salt, and pepper. Season chicken strips with this spice blend.
  • Cook chicken in olive oil over medium-high heat for 5-7 minutes until golden and cooked through. Rest briefly.
  • Whisk together Greek yogurt, mayonnaise, lime juice, honey, chipotle powder, and salt to make the Southwest sauce.
  • Warm tortillas and spread with Southwest sauce. Layer with lettuce, chicken, corn, beans, tomatoes, onion, avocado, and cilantro.
  • Fold the bottom over the filling, tuck in sides, and roll tightly. Slice diagonally and serve.
