Ingredients
Dough
1.5cupswarm water(lukewarm, around 100°F (38°C))
2 1/4teaspoonsinstant or active dry yeast(1 standard packet)
1tablespoonbrown sugar or granulated sugar
1teaspoonsalt
1tablespoonunsalted butter, melted and cooled
3 3/4cupsall-purpose flour(plus more for work surface)
1/2cupbaking soda
9cupswater(for baking soda bath)
Topping
to tastecoarse salt(or coarse sea salt)
spicy cheese sauce or your favorite mustarddipping sauce
Instructions
Mix warm water, yeast, and sugar; let sit 5 minutes until foamy. Add salt, butter, and 3 cups flour; beat 1 min. Add 3/4 cup flour; beat until dough forms, then knead for 5 min. Rest dough 10-30 min.
Preheat oven to 400°F (204°C). Divide dough into 6 pieces, roll into 20-inch ropes, cut into 1.5-2 inch pieces. Boil water with baking soda, then boil pretzels for 10-15 sec. Remove and place on baking sheets, sprinkle with coarse salt.
Bake for 15 minutes until golden brown. Serve warm with cheese sauce or mustard.
Notes
For best results, lightly flour the work surface and avoid over-flouring to keep the dough soft and chewy.
