Snickerdoodle Cobbler

A warm, cinnamon-spiced apple cobbler topped with snickerdoodle cookie dough, drizzled with caramel and served with vanilla ice cream.

Ingredients

cookie mix

  • 17.9 ounces Snickerdoodle cookie mix (Betty Crocker brand, plus cinnamon sugar pouch)
  • ½ teaspoon apple pie spice blend
  • ½ cup salted butter (softened to room temperature)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 21 ounces can of apple pie filling
  • ¼ cup caramel dessert sauce
  • Vanilla ice cream Vanilla ice cream (for serving)

Instructions 

  • Preheat oven to 375°F (190°C). Spray an 8x8 inch (20x20 cm) baking dish.
  • Mix cinnamon sugar and apple pie spice; set aside 2 tbsp. of mixture.
  • Combine cookie mix, remaining spice mixture, butter, egg, and vanilla until smooth. Press half into dish.
  • Spread apple filling over cookie layer. Drop dollops of remaining dough on top. Sprinkle with reserved spice mixture.
  • Bake 45-50 mins until golden and bubbly. Cool slightly, then drizzle caramel and serve with ice cream.

Notes

For best results, tent with foil if browning too quickly.
