A hearty and flavorful beef stew perfect for summer, cooked slowly to tender perfection with fresh vegetables and herbs.

Ingredients

Main ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 1/4-1/2 pounds stew beef (cut into chunks)
  • 2 tablespoons flour (see note)
  • to taste salt and pepper salt and pepper
  • 2-3 cloves garlic (minced)
  • 1 bay leaf bay leaf
  • 1 shallot shallot (thinly sliced)
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • 2 small zucchini (chopped)
  • 1 yellow yellow bell pepper (chopped)
  • 1 red red bell pepper (chopped)
  • for garnish chopped fresh basil (for garnish)
  • for garnish grated parmesan cheese (for garnish)

Instructions 

  • Heat olive oil in a large skillet, brown seasoned beef on all sides, then transfer to slow cooker.
  • Add garlic, shallots, tomato paste, bay leaf, and broth to the slow cooker; stir and cook on low for 6 hours.
  • About 30 minutes before end, add zucchini and peppers, stir gently, and continue cooking.
  • Serve hot, garnished with basil and parmesan cheese, with your choice of grains.

Notes

This stew is best enjoyed with fresh herbs and a side of grains or bread.
