A hearty and flavorful beef stew perfect for summer, cooked slowly to tender perfection with fresh vegetables and herbs.

Instructions
Heat olive oil in a large skillet, brown seasoned beef on all sides, then transfer to slow cooker.
Add garlic, shallots, tomato paste, bay leaf, and broth to the slow cooker; stir and cook on low for 6 hours.
About 30 minutes before end, add zucchini and peppers, stir gently, and continue cooking.
Serve hot, garnished with basil and parmesan cheese, with your choice of grains.
Notes
This stew is best enjoyed with fresh herbs and a side of grains or bread.
