Instructions
Allow meat to sit out 20 minutes, then season with salt and sear in olive oil until browned. Remove and set aside.
Add chopped peppers, onion, tomatoes, tomato sauce, beef stock, spices, and seasonings to the slow cooker. Stir in the seared beef.
Cook on low for 8-10 hours or high for 4-6 hours until beef is tender and shreddable.
Remove beef, shred with forks, then return to the slow cooker. Stir in tomato paste to thicken. Serve with toppings.
Notes
For best flavor, let the chili sit for a few minutes before serving to allow flavors to meld.
