A hearty and flavorful chili made with tender shredded beef, perfect for cozy dinners. Easily cooked in a slow cooker for maximum convenience.

Ingredients

Meat

  • 3.5 lb beef chuck roast (approximately)
  • 1 tsp sea salt (to season meat)
  • 1 tbsp olive oil
  • 2 small bell peppers (1 green and 1 red, small diced)
  • 1 medium onion (small diced)
  • 1 can tomato sauce (approx. 15 oz.)
  • 1 can diced tomatoes (approx. 14.5 oz)
  • 0.33 cup beef stock
  • 1 tsp Worcestershire sauce
  • 1 can kidney beans (rinsed, approx. 15.5 oz)
  • 1 can pinto beans (rinsed, approx. 15.5 oz)
  • 1 can green chiles (4 oz.)
  • 3 T chili powder
  • 1 T cumin
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 0.5 tsp onion powder
  • 0.5 tsp pepper
  • 0.5 tsp sea salt
  • 0.125 tsp cinnamon
  • 1 tsp sugar
  • 0.25 tsp crushed red pepper (optional)
  • 3 T tomato paste

Instructions 

  • Allow meat to sit out 20 minutes, then season with salt and sear in olive oil until browned. Remove and set aside.
  • Add chopped peppers, onion, tomatoes, tomato sauce, beef stock, spices, and seasonings to the slow cooker. Stir in the seared beef.
  • Cook on low for 8-10 hours or high for 4-6 hours until beef is tender and shreddable.
  • Remove beef, shred with forks, then return to the slow cooker. Stir in tomato paste to thicken. Serve with toppings.

Notes

For best flavor, let the chili sit for a few minutes before serving to allow flavors to meld.
