Enjoy tender, flavorful Italian beef sandwiches made effortlessly in the slow cooker, perfect for a hearty meal.

Ingredients

Meat

  • 3-4 lbs chuck roast
  • 2 cups beef broth
  • 1 packet dry Italian dressing mix (0.7 oz.)
  • 2 teaspoons Italian seasoning
  • 1 16 oz. jar pepperoncini with juice (stems removed and sliced into 1" pieces)

Bread & Dairy

  • as needed Hoagie rolls
  • as needed Butter
  • as needed Sliced provolone/mozzarella cheese

Optional toppings

  • as needed Giardiniera (optional)

Instructions 

  • Optional: Sear the roast in a skillet over medium-high heat until browned, then deglaze with beef broth.
  • Add the roast to a slow cooker, sprinkle with Italian dressing mix and Italian seasoning, then add beef broth, sliced pepperoncini, and 1/2 cup of pepperoncini juice.
  • Cover and cook on low for 8 hours or high for 4-5 hours until tender.
  • Shred the cooked beef, then toast buttered rolls with cheese until melted. Assemble sandwiches with beef and peppers, serve hot.
  • Optional: Add giardiniera or serve with au jus for extra flavor.

Notes

For best results, shred the beef and serve immediately. Feel free to customize toppings and bread types.
