A flavorful and creamy Cajun chicken pasta cooked effortlessly in the slow cooker, perfect for a comforting meal.

Ingredients

Protein

  • 500 g Boneless Skinless Chicken Breasts
  • 1 tablespoon olive oil
  • 0.5 red bell pepper red bell pepper, finely chopped
  • 0.5 green bell pepper green bell pepper, finely chopped
  • 1 cup 2% milk
  • 100 g light cream cheese, cubed
  • 2 cups chicken stock (better than bouillon)
  • 240 g uncooked penne pasta
  • 50 g parmesan, finely grated

Garnish

  • to taste fresh finely chopped parsley (optional) (for garnish)
  • 1 tablespoon sweet paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon thyme
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon black pepper

Instructions 

  • Combine all seasonings in a small bowl.
  • Pat chicken dry, add to slow cooker with oil and seasoning, then stir to coat.
  • Add peppers and pour stock over, then cook on high for 2.5 hours.
  • Remove chicken, slice, then add cream cheese and whisk until melted. Stir in milk.
  • Return chicken and pasta, cook on high for 30 minutes until pasta is tender. Stir in Parmesan and garnish with parsley.

Notes

Ensure the pasta absorbs the sauce by cooking until tender, and adjust seasoning to taste.
