Ingredients

Broth and Sauces

  • 1 cup Pace Picante Sauce
  • 2 can (10.5-ounce) condensed cream of chicken soup
  • 1 can Rotel tomatoes and green chiles
  • 1 can (15-ounce) black beans (drained and rinsed)
  • 1.5 cups canned or frozen corn

Spices and Seasonings

  • 1 teaspoon cumin
  • 1 teaspoon hot sauce
  • 1.33 cups water

Chicken and Toppings

  • 2 boneless, skinless chicken breasts (cut in half)
  • 4 corn tortillas cut into strips
  • 1 cup shredded cheddar cheese
  • 0.25 cup chopped fresh cilantro

Optional toppings

  • to taste sour cream and olives (for serving)

Instructions 

  • Combine the first 8 ingredients in a slow cooker and add chicken, ensuring it's submerged.
  • Cook on LOW for 4 hours.
  • Shred the chicken, add tortillas and cheese, then cook for 15 minutes on LOW.
  • Stir in cilantro and serve with optional toppings.
