1.5lbsboneless, skinless chicken breasts or thighs, diced(Bite-sized pieces)
1mediumwhite onion, diced
0.75cupchicken broth
1/2lemonjuice of 1/2 lemon
1tbspghee
1tbspminced ginger
2tbspminced garlic
3tspgaram masala
2tspturmeric
1.5tspsalt
1tspcumin
1tspcoriander
1tspchili powder
1tsppaprika
0.5tspcinnamon
0.5tspblack pepper
6oztomato paste
14ozunsweetened coconut milk, full-fat
2tsparrowroot flour(dissolved in water to thicken, if desired)
Garnish
to tastecilantro(chopped, for garnish)
Instructions
Add chicken and onion to slow cooker with spices, broth, lemon juice, ghee, ginger, and garlic. Stir to coat.
Cover and cook on low for 6-8 hours or high for 4 hours.
Stir in coconut milk and dissolved arrowroot to thicken if desired. Heat for 10-15 minutes.
Serve garnished with cilantro, optionally over cauliflower rice.
