Ingredients

Meat

  • 3.25 pounds chuck roast (fat trimmed and cut into 2-inch chunks)
  • 1 cup diced white onion
  • 2 chiles chipotle chiles in adobo sauce (finely chopped)
  • 1 tablespoon adobo sauce
  • 3 cloves garlic (grated or minced)
  • 4 ounce diced green chiles
  • 0.25 cup fresh lime juice
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 2 teaspoons fine sea salt or to taste
  • 0.25 teaspoon ground cloves
  • 2 bay leaves bay leaves
  • 1 tablespoon honey (optional)
  • 3/4 cup beef broth

Tortillas and toppings

  • as needed corn tortillas (avocado, white onion, cilantro, and lime wedges for serving)

Instructions 

  • Add all ingredients except bay leaves into the slow cooker and stir. Add bay leaves, cover, and cook on low for 8-9 hours.
  • Remove beef, shred with forks, discard bay leaves, and return beef to the juices. Toss to coat and serve.
