A flavorful and tender beef dish perfect for slow cooking, packed with smoky spices and zesty lime.

Ingredients

Meat

  • 3 pounds beef chuck roast
  • 1 cup beef broth
  • 3 chipotle peppers in adobo chipotle peppers in adobo
  • 4 cloves garlic
  • 1 small onion
  • 1/4 cup fresh lime juice
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon ground cumin
  • 2 teaspoons dried oregano
  • 1/4 teaspoon ground cloves
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 bay leaves bay leaves

Instructions 

  • Cut beef into chunks, season with salt and pepper.
  • Blend broth, chipotle, garlic, onion, lime juice, vinegar, cumin, oregano, and cloves until smooth.
  • Place beef in slow cooker, pour sauce over, add bay leaves, and cook on low 8-9 hours.
  • Shred beef, mix with sauce, and let soak for a few minutes before serving.

Notes

For extra flavor, toast the spices before blending.
