A fresh and creamy pasta salad combining ripe avocado, sweet corn, and a tangy ranch dressing for a quick, healthy meal.

Ingredients

Pasta

  • 0.5 pound Pasta

Red Onion

  • 0.5 small Red Onion (finely chopped)

Corn kernels

  • 1.5 cups fresh corn or defrosted frozen corn kernels

Red Bell Pepper

  • 1 red Red Bell Pepper (chopped)

Avocado

  • 1 large Avocado (diced)

Skinny Buttermilk Ranch Dressing

  • 1 cup Skinny Buttermilk Ranch Dressing (or 1 cup ranch dressing of your choice)

Instructions 

  • Cook pasta until tender, then drain and set aside.
  • Place chopped red onion and corn in a strainer over boiling water, then drain pasta over them to slightly cook.
  • Combine drained pasta, onion, corn, chopped bell pepper, and diced avocado in a large bowl and let cool.
  • Gently toss the ingredients with the ranch dressing until evenly coated.
  • Serve immediately or chill before serving.

Notes

For extra flavor, add fresh herbs like cilantro or parsley.
