Ingredients

Meat and Vegetables

  • 2 pounds ground beef
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 large onion (chopped)
  • 2 stalks celery (chopped)
  • 4 cloves garlic
  • 32 ounce bag frozen mixed vegetables
  • 1/4 cup tomato paste
  • 1 tablespoon fresh rosemary (chopped)
  • 1/2 tablespoon fresh thyme (chopped)
  • 1 tablespoon fresh oregano (chopped)
  • 1/2 tablespoon dried parsley
  • 2 tablespoons worcestershire sauce
  • 2 cups beef broth
  • 3 tablespoons all purpose flour
  • 4 large russet potatoes
  • 1 cup chicken broth
  • 1/3 cup sour cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon paprika
  • 1/3 cup grated cheddar cheese
  • 3 tablespoons shaved parmesan cheese

Instructions 

  • Sauté onions, celery, and garlic in olive oil until softened.
  • Add ground beef and cook until browned; stir in vegetables, tomato paste, herbs, Worcestershire sauce, and broth. Simmer until thickened.
  • Meanwhile, boil potatoes until tender; mash with sour cream, salt, pepper, and paprika.
  • Spread mashed potatoes over beef mixture in skillet; top with cheddar and parmesan cheeses.
  • Broil briefly until cheese melts and bubbles. Serve hot.

Notes

For a vegetarian version, substitute the beef with lentils or plant-based meat alternatives.
