A quick and hearty one-pan meal combining tender chicken, nutritious broccoli, and cheesy rice for a satisfying dinner.

Ingredients

Protein

  • 2 pounds boneless chicken breasts (cubed)
  • 12 ounces frozen broccoli (about 4 cups)
  • 2 cups shredded cheddar cheese

Pantry Items

  • 4 tablespoons olive oil (divided)
  • 1/2 tablespoon onion powder
  • 2 cloves garlic (minced)
  • 1 cup uncooked white rice (long grain)
  • 2 cups chicken broth
  • 1/2 cup water

Instructions 

  • Season chicken with salt and pepper. Brown in 3 tbsp olive oil for 4-5 minutes.
  • Add onion powder and garlic; saute for 1 minute.
  • Push chicken aside, add 1 tbsp olive oil, and cook rice for 2-3 minutes.
  • Pour in broth and water, bring to boil, then simmer covered for 15 minutes.
  • Add broccoli, stir, and cook covered for 5 minutes until tender. Stir in 1/2 cup cheese, then top with remaining cheese and melt.

Notes

For extra flavor, add a squeeze of lemon or a sprinkle of red pepper flakes.
