A quick and hearty one-pan meal combining tender chicken, nutritious broccoli, and cheesy rice for a satisfying dinner.
Ingredients

boneless chicken breasts (cubed)

frozen broccoli (about 4 cups)

shredded cheddar cheese

onion powder

uncooked white rice (long grain)

chicken broth

Instructions
Season chicken with salt and pepper. Brown in 3 tbsp olive oil for 4-5 minutes.
Add onion powder and garlic; saute for 1 minute.
Push chicken aside, add 1 tbsp olive oil, and cook rice for 2-3 minutes.
Pour in broth and water, bring to boil, then simmer covered for 15 minutes.
Add broccoli, stir, and cook covered for 5 minutes until tender. Stir in 1/2 cup cheese, then top with remaining cheese and melt.
Notes
For extra flavor, add a squeeze of lemon or a sprinkle of red pepper flakes.
