A quick and vibrant Thai mango salad combining fresh fruits, herbs, and a tangy dressing for a refreshing appetizer or side dish.

Ingredients

Main ingredients

  • 2 pieces firm green mangoes, peeled and julienned
  • 1 small red bell pepper, thinly sliced
  • 1 medium carrot, julienned
  • 1 small red onion, thinly sliced
  • 1 handful fresh cilantro leaves
  • 1 handful fresh mint leaves
  • 2 pieces Thai bird chilies, finely chopped
  • 2 tbsp roasted peanuts, crushed
  • 1 clove garlic, minced
  • 3 tbsp fresh lime juice
  • 2 tbsp fish sauce
  • 2 tbsp palm sugar or brown sugar
  • 1 tbsp neutral oil (optional)

Instructions 

  • Peel and julienne the mangoes, then place in a large bowl.
  • Add sliced bell pepper, julienned carrot, and sliced onion to the bowl.
  • Mix lime juice, fish sauce, minced garlic, and sugar until dissolved; add oil if desired.
  • Pour dressing over the salad, add chopped chilies, and toss gently.
  • Fold in most herbs, transfer to a plate, sprinkle with peanuts and remaining herbs.
  • Serve immediately or chill briefly for a refreshing start.

Notes

Adjust chili level to taste for milder or spicier salad.
