A quick and vibrant Thai mango salad combining fresh fruits, herbs, and a tangy dressing for a refreshing appetizer or side dish.

palm sugar or brown sugar

Instructions
Peel and julienne the mangoes, then place in a large bowl.
Add sliced bell pepper, julienned carrot, and sliced onion to the bowl.
Mix lime juice, fish sauce, minced garlic, and sugar until dissolved; add oil if desired.
Pour dressing over the salad, add chopped chilies, and toss gently.
Fold in most herbs, transfer to a plate, sprinkle with peanuts and remaining herbs.
Serve immediately or chill briefly for a refreshing start.
Notes
Adjust chili level to taste for milder or spicier salad.
