A refreshing and easy-to-make salad that highlights the crispness of cucumbers with a tangy dressing.

Ingredients

  • 2 medium english cucumbers (thinly sliced)
  • 2 tablespoons toasted sesame seeds (optional)
  • 1/4 cup rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 2 teaspoons kosher salt

Instructions 

  • Wash and thinly slice the cucumbers.
  • Sprinkle cucumbers with salt, mix, and drain in a colander for 30 minutes.
  • Whisk rice vinegar, sesame oil, and sugar in a bowl.
  • Squeeze cucumbers dry, add to dressing, and toss.
  • Season with salt and garnish with sesame seeds if desired.
