Ingredients

Vegetables

  • 4 cups shredded green cabbage (packed)
  • 2.5 cups cooked shrimp (pan seared)
  • 1 cup cooked rice (Jasmine rice)
  • 1 cup red bell pepper (sliced)
  • 3/4 cup green onion or scallions (chopped)

Dressing

  • 1 tbsp lemon juice
  • 1.5 tsp Dijon mustard
  • 1/3 cup fresh dill (chopped)
  • 3/4 tsp garlic powder (or 2 minced garlic cloves)
  • 1 tsp sea salt
  • 1/2 tsp black pepper

Instructions 

  • In a large bowl, combine shredded cabbage, cooked shrimp, rice, red bell pepper, and scallions.
  • In a small bowl, whisk together lemon juice, Dijon mustard, dill, garlic powder, salt, and pepper to make the dressing.
  • Pour the dressing over the salad and toss to combine.
  • Serve immediately or refrigerate for 30 minutes to allow flavors to meld.

Notes

For extra flavor, add a squeeze of fresh lemon before serving.
