Ingredients

Protein

  • 1 pound shrimp, peeled and deveined

Vegetables

  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 8 ounces mushrooms, sliced

Oils & Sauces

  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, minced
  • 3 cloves garlic, minced

Instructions 

  • Heat olive oil in a large skillet over medium heat.
  • Add garlic and ginger, sauté for 1 minute.
  • Add shrimp and cook until pink, about 3-4 minutes.
  • Add asparagus and mushrooms, stir-fry for 5-7 minutes until tender.
  • Stir in soy sauce and sesame oil, cook for 2 minutes.
  • Serve hot.

Notes

For extra flavor, add a sprinkle of sesame seeds or chopped green onions before serving.
