flour tortillas (can use corn tortillas if you prefer)

Instructions
Preheat oven to 425°F (220°C).
Toss sliced peppers and onions with 1 tbsp olive oil and half of the fajita seasoning. Roast for 10-12 minutes.
Push vegetables aside, add shrimp to the center, drizzle with remaining olive oil and seasoning. Toss to coat and lay in a single layer.
Bake for 10 minutes until shrimp are cooked through.
Serve in tortillas with lime wedges and desired toppings.
