Enjoy flavorful shrimp fajitas roasted to perfection on a sheet pan, served with fresh toppings and warm tortillas.

Ingredients

Seasonings

  • 2 tablespoons fajita seasoning
  • 1 pound shrimp (peeled and deveined)
  • 2 tablespoons olive oil (divided)
  • 1 yellow bell pepper yellow bell pepper (seeds and membranes removed and thinly sliced)
  • 1 green bell pepper green bell pepper (seeds and membranes removed and thinly sliced)
  • 1 red bell pepper red bell pepper (seeds and membranes removed and thinly sliced)
  • 1 red onion red onion (thinly sliced)
  • 8 flour tortillas flour tortillas (can use corn tortillas if you prefer)
  • 1 to 2 limes limes (cut into wedges)
  • to taste shredded cheese
  • to taste sour cream
  • to taste guacamole
  • to taste pico de gallo
  • to taste cilantro

Instructions 

  • Preheat oven to 425°F (220°C).
  • Toss sliced peppers and onions with 1 tbsp olive oil and half of the fajita seasoning. Roast for 10-12 minutes.
  • Push vegetables aside, add shrimp to the center, drizzle with remaining olive oil and seasoning. Toss to coat and lay in a single layer.
  • Bake for 10 minutes until shrimp are cooked through.
  • Serve in tortillas with lime wedges and desired toppings.

Use fresh ingredients for best flavor and customize toppings to your preference.
