Instructions
Prepare the dough by mixing flours, salt, and cold butter until crumbly, then add water and form into a disk. Chill for 30 minutes.
Roll out the dough into a circle, transfer to a baking sheet, and spread pumpkin puree mixed with sage and caramelized onions in the center.
Crumble goat cheese over the filling, fold edges of the dough over the filling, and brush with beaten egg.
Bake at 375°F (190°C) for 30 minutes until golden. Garnish with sage leaves, honey, and sea salt before serving.
Notes
For a crisp crust, chill the dough thoroughly before baking.
