Ingredients

  • 1 Tablespoon avocado or olive oil
  • 1 medium yellow onion (chopped)
  • 2 cloves garlic (minced)
  • 1 green bell pepper green bell pepper (finely chopped)
  • 1 15 oz can black beans (drained and rinsed)
  • 1.5 cups frozen sweet corn (or canned, drained)
  • 0.25 cup cilantro (chopped)
  • 2 Tablespoons Taco seasoning
  • 1 15 oz can fire roasted tomatoes
  • 3 cups cooked basmati or jasmine rice (1 cup uncooked rice)
  • 1.5 lbs salmon
  • 2 teaspoons avocado or olive oil
  • 0.5 lime lime (for juice)
  • 1 large avocado
  • 0.25 cup Greek yogurt
  • 3 Tablespoons fresh cilantro
  • 3 Tablespoons fresh lime juice
  • 0.5 teaspoon salt
  • 2 Tablespoons water

Additional toppings

  • Mexican rice
  • Salmon
  • Avocado crema (for drizzling)
  • Jalapeno slices (for topping)
  • Pico de gallo or salsa (for topping)
  • Queso fresco or cotija cheese (for topping)
  • Fresh cilantro (for topping)

Instructions 

  • Cook rice according to package instructions.
  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Rub salmon with oil and taco seasoning, then drizzle with lime juice. Bake for 15-18 minutes until flaky.
  • Sauté onion, garlic, and bell pepper in oil until translucent. Add beans, corn, cilantro, seasoning, tomatoes, and rice; stir and warm through.
  • Make avocado crema by blending avocado, yogurt, cilantro, lime juice, salt, and water until smooth. Assemble bowls with rice, salmon, toppings, and drizzle with crema.
