Instructions
Cook rice according to package instructions.
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Rub salmon with oil and taco seasoning, then drizzle with lime juice. Bake for 15-18 minutes until flaky.
Sauté onion, garlic, and bell pepper in oil until translucent. Add beans, corn, cilantro, seasoning, tomatoes, and rice; stir and warm through.
Make avocado crema by blending avocado, yogurt, cilantro, lime juice, salt, and water until smooth. Assemble bowls with rice, salmon, toppings, and drizzle with crema.
