A delicious and easy-to-make chicken salad using rotisserie chicken, perfect for a quick meal or a picnic.

Ingredients

Chicken Salad Ingredients

  • 6 cups shredded rotisserie chicken (or leftover cooked chicken fillet)
  • 1/2 cup diced celery
  • 1/3 cup diced red onion
  • 1/4 cup pickle relish
  • 1/4 cup plain greek yogurt
  • 1/3 cup mayo
  • 2 tablespoons pickle juice
  • 1 tablespoon dijon mustard
  • salt and pepper (to taste)

Instructions 

  • Pulse rotisserie chicken in a food processor, then add to a large bowl.
  • Add diced celery, onion, relish, yogurt, mayo, mustard, pickle juice, salt, and pepper to the bowl.
  • Toss everything together to mix into a creamy chicken salad.
  • Serve immediately or chill before serving.

Notes

For a lighter version, reduce the mayo and use more Greek yogurt.
