A delicious and easy-to-make chicken salad using rotisserie chicken, perfect for a quick meal or a picnic.
Ingredients

shredded rotisserie chicken
(or leftover cooked chicken fillet)

diced celery

diced red onion

pickle relish
1/4

plain greek yogurt

mayo

pickle juice

dijon mustard
salt and pepper
(to taste)
Instructions
Pulse rotisserie chicken in a food processor, then add to a large bowl.
Add diced celery, onion, relish, yogurt, mayo, mustard, pickle juice, salt, and pepper to the bowl.
Toss everything together to mix into a creamy chicken salad.
Serve immediately or chill before serving.
Notes
For a lighter version, reduce the mayo and use more Greek yogurt.
