  • 1 whole chicken (3-4 pounds)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1 whole lemon, quartered
  • 1 sprig rosemary

Instructions 

  • Preheat oven to 400°F (200°C).
  • Rinse and pat dry the chicken, then rub with olive oil, salt, pepper, paprika, and garlic powder.
  • Stuff lemon quarters and rosemary inside the cavity, then place in a roasting pan.
  • Roast for 75 minutes until internal temperature reaches 165°F (74°C).
  • Let rest for 10 minutes before carving.
