Roasted Tomato Marinara Sauce (an Easy Low-Carb Pasta Sauce Recipe!

This flavorful low-carb marinara sauce combines roasted tomatoes and herbs for a rich, homemade pasta sauce.

Ingredients

  • 8 ounces Kaizen lupini bean pasta (any variety (pictured is Ziti))
  • 10–12 tomatoes tomatoes (cut in half)
  • 3 tablespoons extra virgin olive oil (divided)
  • large red onion red onion (diced)
  • 4 cloves garlic (grated)
  • Pinch salt and black pepper
  • 1-½ teaspoons dried oregano
  • 1-½ teaspoons dried thyme
  • 12 ounces canned tomato sauce
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon ground paprika
  • fresh burrata cheese or Parmesan cheese (optional)
  • Fresh basil, olive oil and red chili flakes (optional garnish)

Instructions 

  • Preheat oven to 425°F. Roast tomato halves on a parchment-lined sheet with 2 tbsp olive oil for 30–40 mins. Cool, chop, and set aside.
  • Heat 1 tbsp olive oil, cook red onion and garlic for a few minutes. Add salt, pepper, oregano, thyme.
  • Add roasted tomatoes, juices, tomato sauce, balsamic vinegar, and paprika. Simmer for 20 mins.
  • Cook pasta in boiling salted water for 5–8 mins. Reserve ½ cup pasta water, drain.
  • Combine pasta with sauce and reserved water. Serve with cheese, basil, olive oil, and chili flakes if desired.

Notes

Finely chop tomatoes for a smoother sauce or roughly chop for a chunkier texture.
