This flavorful low-carb marinara sauce combines roasted tomatoes and herbs for a rich, homemade pasta sauce.

Instructions
Preheat oven to 425°F. Roast tomato halves on a parchment-lined sheet with 2 tbsp olive oil for 30–40 mins. Cool, chop, and set aside.
Heat 1 tbsp olive oil, cook red onion and garlic for a few minutes. Add salt, pepper, oregano, thyme.
Add roasted tomatoes, juices, tomato sauce, balsamic vinegar, and paprika. Simmer for 20 mins.
Cook pasta in boiling salted water for 5–8 mins. Reserve ½ cup pasta water, drain.
Combine pasta with sauce and reserved water. Serve with cheese, basil, olive oil, and chili flakes if desired.
Notes
Finely chop tomatoes for a smoother sauce or roughly chop for a chunkier texture.
