A vibrant and flavorful dish combining roasted cherry tomatoes, fragrant garlic, fresh basil, and creamy burrata for a delightful appetizer or light meal.

Ingredients

Vegetables

  • 6-7 cloves garlic cloves (peeled)
  • 1 halved shallot
  • 4 cups cherry tomatoes
  • 2 tablespoons fresh thyme leaves
  • salt and black pepper salt and black pepper (to taste)
  • chili flakes chili flakes (to taste)
  • 1/3 cup extra virgin olive oil
  • 1 cup fresh basil leaves
  • handful micro basil (optional)
  • 2-3 balls burrata cheese (at room temperature)
  • grilled bread or crackers for serving

Instructions 

  • Preheat oven to 400°F (200°C). Place garlic, shallot, 3 cups tomatoes, and thyme in a baking dish. Drizzle with 1/4 cup olive oil, season with salt, pepper, and chili flakes. Roast for 20 minutes until tomatoes burst.
  • Arrange burrata in a serving bowl. Slice remaining tomatoes. Squeeze roasted garlic and shallots onto a board, mash into a paste.
  • Mix garlic paste with roasted tomatoes, add remaining olive oil, and season with pepper. Spoon mixture over burrata. Top with basil and sliced tomatoes. Finish with salt and chili flakes.
  • Serve immediately with grilled bread or crackers for best texture and flavor.
