Instructions
Preheat oven to 400°F (200°C). Place garlic, shallot, 3 cups tomatoes, and thyme in a baking dish. Drizzle with 1/4 cup olive oil, season with salt, pepper, and chili flakes. Roast for 20 minutes until tomatoes burst.
Arrange burrata in a serving bowl. Slice remaining tomatoes. Squeeze roasted garlic and shallots onto a board, mash into a paste.
Mix garlic paste with roasted tomatoes, add remaining olive oil, and season with pepper. Spoon mixture over burrata. Top with basil and sliced tomatoes. Finish with salt and chili flakes.
Serve immediately with grilled bread or crackers for best texture and flavor.
