Ingredients

Cauliflower

  • 1 head Cauliflower (cut into florets)
  • 2 tablespoons Olive Oil (for roasting)
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Garlic Powder
  • to taste Salt
  • to taste Black Pepper
  • 1/2 cup Tahini
  • 2 tablespoons Lemon Juice (freshly squeezed)
  • 1 tablespoon Maple Syrup or Honey (use maple syrup for vegan option)
  • 1/4 cup Warm Water (to achieve desired consistency)
  • 1 clove Minced Garlic (for flavor)
  • 1/4 cup Fresh Parsley (chopped)
  • 1/4 cup Toasted Pumpkin Seeds or Pine Nuts
  • 1/4 cup Pomegranate Seeds

Instructions 

  • Preheat oven to 400°F (200°C). Toss cauliflower florets with olive oil, smoked paprika, garlic powder, salt, and pepper. Roast for 25 minutes until golden.
  • Meanwhile, whisk tahini, lemon juice, maple syrup, minced garlic, and warm water until smooth.
  • Once cauliflower is roasted, let it cool slightly and then toss with tahini sauce.
  • Serve topped with chopped parsley, toasted seeds, and pomegranate seeds.

Notes

For extra flavor, sprinkle with a pinch of sumac or paprika before serving.
