Fresh and healthy rice paper veggie rolls are perfect for a light lunch or appetizer, packed with crisp vegetables and herbs.

Ingredients

Rice Paper Wrappers

  • 1 cup shredded carrots
  • 1 cup cucumber, julienned
  • 1 cup bell pepper, sliced
  • 1 cup avocado, sliced
  • 0.5 cup fresh cilantro
  • 0.5 cup fresh mint leaves
  • 0.25 cup soy sauce (for dipping)
  • 1 tablespoon sesame oil

Instructions 

  • Prepare vegetables: dice carrots, julienne cucumber, slice bell pepper, and cut avocado into thin slices.
  • Submerge rice paper in warm water for 10-15 seconds until pliable.
  • Lay rice paper on a surface, add veggies, cilantro, and mint in the center.
  • Fold bottom over filling, then sides, and roll tightly to close.
  • Repeat with remaining wrappers and fillings, then serve with sesame oil or soy sauce.

Notes

Keep the rolls moist by covering with a damp cloth until serving.
