Fresh and healthy rice paper veggie rolls are perfect for a light lunch or appetizer, packed with crisp vegetables and herbs.
Ingredients
Rice Paper Wrappers

shredded carrots

cucumber, julienned

bell pepper, sliced

avocado, sliced

fresh cilantro

fresh mint leaves

soy sauce (for dipping)

Instructions
Prepare vegetables: dice carrots, julienne cucumber, slice bell pepper, and cut avocado into thin slices.
Submerge rice paper in warm water for 10-15 seconds until pliable.
Lay rice paper on a surface, add veggies, cilantro, and mint in the center.
Fold bottom over filling, then sides, and roll tightly to close.
Repeat with remaining wrappers and fillings, then serve with sesame oil or soy sauce.
Notes
Keep the rolls moist by covering with a damp cloth until serving.
