A fresh and flavorful dish featuring rice paper noodles tossed in a tangy sauce, topped with scallions and sesame seeds.

Rice paper sheets

rice paper sheets (8.5-inch diameter, divided)
Scallion

Thai red chili pepper (sliced, or 2 small pinches gochugaru flakes, optional)
Instructions
Combine sauce ingredients in a small bowl and lightly grease a large chopping board with oil.
Soak 3 rice paper sheets in room temperature water for 10 seconds, then remove and place on the greased board.
Grease both sides of the soaked rice sheets with oil to prevent sticking.
Cut each rice sheet into 6 wide noodles by slicing in half and then into 3 strips.
Place noodles in a bowl, repeat with remaining sheets, then toss with scallions, sesame oil, sesame seeds, chili, and sauce. Serve immediately.
Notes
Ensure rice paper is fully softened before slicing for best texture.
