A fresh and flavorful dish featuring rice paper noodles tossed in a tangy sauce, topped with scallions and sesame seeds.

Ingredients

Sauce ingredients

  • 1 tbsp coconut aminos
  • 1 tsp rice vinegar
  • 1 tsp aged balsamic vinegar
  • 0.1 oz. garlic clove (grated, 2 small cloves)
  • Drizzle oil avocado oil (or light olive oil)

Rice paper sheets

  • 6 sheets rice paper sheets (8.5-inch diameter, divided)

Scallion

  • 1 bulb scallion (chopped)
  • 1 tsp toasted sesame oil
  • Sprinkle sesame seeds toasted white sesame seeds
  • 1 whole Thai red chili pepper (sliced, or 2 small pinches gochugaru flakes, optional)

Instructions 

  • Combine sauce ingredients in a small bowl and lightly grease a large chopping board with oil.
  • Soak 3 rice paper sheets in room temperature water for 10 seconds, then remove and place on the greased board.
  • Grease both sides of the soaked rice sheets with oil to prevent sticking.
  • Cut each rice sheet into 6 wide noodles by slicing in half and then into 3 strips.
  • Place noodles in a bowl, repeat with remaining sheets, then toss with scallions, sesame oil, sesame seeds, chili, and sauce. Serve immediately.

Notes

Ensure rice paper is fully softened before slicing for best texture.
