Ingredients

Fruits and Vegetables

  • 2 pieces ripe mangoes, peeled, pitted, and thinly sliced
  • 1 small red onion, thinly sliced
  • 1 small cucumber, thinly sliced
  • 1 red bell pepper red bell pepper, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro leaves, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 3 tablespoons fresh lime juice
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions 

  • Peel and thinly slice the mangoes and vegetables; halve the cherry tomatoes.
  • Whisk lime juice, honey, olive oil, salt, and black pepper to make the dressing.
  • Combine mango, vegetables, cilantro, and mint in a large bowl.
  • Pour dressing over the salad and toss gently to coat.
  • Chill for at least 15 minutes before serving.
