Ingredients

kidney beans (drained & rinsed)

garbanzo beans (chickpeas, drained & rinsed)

cannellini beans (or great northern beans, drained & rinsed)

red onion, finely chopped

celery, chopped

fresh parsley, chopped

apple cider vinegar

salt & pepper to taste
Instructions
Combine beans, onion, celery, and parsley in a large bowl.
Whisk vinegar, olive oil, sugar, salt, and pepper in a small bowl.
Pour dressing over bean mixture and toss gently.
Refrigerate for at least 1 hour before serving.
