Ingredients

Beans

  • 1 can kidney beans (drained & rinsed)
  • 1 can garbanzo beans (chickpeas, drained & rinsed)
  • 1 can cannellini beans (or great northern beans, drained & rinsed)
  • 1/2 cup red onion, finely chopped
  • 1/2 cup celery, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup apple cider vinegar
  • 2 tbsp olive oil
  • 1 tbsp sugar or honey
  • salt & pepper to taste

Instructions 

  • Combine beans, onion, celery, and parsley in a large bowl.
  • Whisk vinegar, olive oil, sugar, salt, and pepper in a small bowl.
  • Pour dressing over bean mixture and toss gently.
  • Refrigerate for at least 1 hour before serving.

Notes

For best flavor, let the salad chill in the refrigerator before serving.
