Ingredients

Grains

  • 1 cup uncooked quinoa
  • 1 ¾ cups water or vegetable broth

Vegetables

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 piece bell pepper, chopped
  • 1/2 cup shredded carrots
  • 1/4 cup red onion, finely diced
  • 1/4 cup chopped parsley or cilantro

Dairy & Seeds

  • 1/4 cup feta cheese (optional)
  • 1/4 cup toasted sunflower seeds or pumpkin seeds

Lemon Dressing

  • 1/4 cup olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp maple syrup or honey

Salt and pepper to taste

Instructions 

  • Rinse quinoa and cook with water or broth for 15 minutes, then let cool.
  • Combine cooked quinoa with vegetables and herbs in a large bowl.
  • Whisk together dressing ingredients in a small jar or bowl.
  • Pour dressing over salad and toss to combine. Top with feta and seeds if desired.
  • Serve immediately or chill for 30 minutes to meld flavors.
