A vibrant, healthy salad combining quinoa, black beans, and fresh vegetables, perfect for a light meal or side dish.
Ingredients

quinoa, rinsed

Legumes

black beans, drained and rinsed
Vegetables

red bell pepper

corn (fresh or frozen)

red onion, finely chopped

Dressing

Juice of 2 limes
lime juice

Instructions
Cook quinoa in water until fluffy, then let cool.
Mix cooled quinoa with black beans, red bell pepper, corn, red onion, and cilantro.
Whisk olive oil, lime juice, salt, and pepper; pour over salad and toss.
Adjust seasoning as needed and refrigerate for at least 30 minutes before serving.
Notes
This salad is best served chilled and can be stored in the refrigerator for up to 2 days.
