A vibrant, healthy salad combining quinoa, black beans, and fresh vegetables, perfect for a light meal or side dish.

Ingredients

Grains

  • 1 cup quinoa, rinsed
  • 2 cups water

Legumes

  • 1 can (15 oz) black beans, drained and rinsed

Vegetables

  • 1 red bell pepper red bell pepper, diced
  • 1 cup corn (fresh or frozen)
  • 1/2 cup red onion, finely chopped

Herbs

  • 1/4 cup fresh cilantro, chopped

Dressing

  • 1/4 cup olive oil
  • Juice of 2 limes lime juice
  • to taste salt and pepper

Instructions 

  • Cook quinoa in water until fluffy, then let cool.
  • Mix cooled quinoa with black beans, red bell pepper, corn, red onion, and cilantro.
  • Whisk olive oil, lime juice, salt, and pepper; pour over salad and toss.
  • Adjust seasoning as needed and refrigerate for at least 30 minutes before serving.

Notes

This salad is best served chilled and can be stored in the refrigerator for up to 2 days.
