A fast and flavorful shrimp pasta dish cooked in one pot, perfect for a quick weeknight dinner.

Ingredients

Pasta

  • 8 oz spaghetti or linguine

Protein

  • 1 lb shrimp, peeled and deveined

Aromatics

  • 4 cloves garlic, minced

Spices

  • 0.5 tsp red pepper flakes

Citrus

  • 1 lemon lemon zest and juice

Broth

  • 2 cups vegetable or chicken broth

Oils

  • 2 tbsp olive oil

Cheese

  • 0.25 cup grated Parmesan cheese (optional)

Salt and Pepper

Garnish

  • null null Fresh parsley, chopped, for garnish

Instructions 

  • Heat olive oil in a large pot, sauté garlic and red pepper flakes for 1 minute.
  • Add broth, lemon zest, and juice; bring to simmer. Cook pasta until al dente, about 8-10 minutes.
  • During last 2-3 minutes, add shrimp; cook until pink and opaque.
  • Remove from heat, stir in Parmesan cheese if using, season with salt and pepper.
  • Let rest for 1 minute, then garnish with parsley and serve.

Notes

Use fresh parsley for best flavor and adjust seasoning as needed.
